800 g (approx. 1.75 lbs) whole sea bass (branzino)
1 bay leaf
250 g cherry tomatoes
Fresh parsley, to taste
Extra virgin olive oil, to taste
Fine salt, to taste
Black pepper, to taste
Fresh basil for garnish, to taste
Instructions
To prepare the baked sea bass, begin with the cherry tomatoes: slice them in half and finely chop the parsley. Transfer them onto a baking sheet, drizzle with extra virgin olive oil, and season with salt and pepper.
Bake in a preheated conventional oven at 180°C (350°F) for about 10 minutes. In the meantime, clean the sea bass.
After gutting the fish, scale it by scraping the spine of the knife blade against the grain (from tail to head). Next, trim off all the fins: dorsal, lateral, and pelvic.
Place a pinch of salt, a garlic clove, and a bay leaf inside the fish cavity. Arrange the sea bass on the baking sheet alongside the tomatoes, drizzle the surface of the fish with olive oil, and bake for 15 minutes.
Once cooked, garnish with a few fresh basil leaves; the baked sea bass is ready to be enjoyed.
When arranging the fish on a serving platter, you can spoon the pan juices over the top, or blend the pan drippings using an immersion blender or food mill to create a smooth, creamy sauce.
