Pan-Fried Sardines Marinara-Style
Here is how to make our skillet sardines recipe—a simple and delicious seafood dish that comes together in just 25 minutes.
Ingredients
- 800 g (approx. 1.75 lbs) fresh sardines
- 350 g (approx. 12 oz) ripe tomatoes
- Fresh basil
- Fresh flat-leaf parsley
- Oregano
- Garlic
- Olive oil
- Salt
- Black pepper
Instructions
- Gut and scale the sardines by gently scraping the skin. Rinse thoroughly under cold water, pat dry with paper towels, and season lightly with salt.
- In a large skillet, heat 5 tablespoons of olive oil with one finely minced garlic clove and a pinch of oregano.
- Pass the ripe tomatoes through a fine-mesh food mill (or sieve), add the purée to the skillet, and bring the sauce to a gentle boil.
- Add the prepared sardines to the pan and cook over medium heat for about 6 minutes.
- Season with salt and black pepper to taste, then finish with a tablespoon of finely chopped basil and parsley combined.
- Serve immediately.
