1 kg (approx. 2.2 lbs) lamb shoulder, cut into pieces
1 glass vinegar
1/2 glass oil
Salt, to taste
Black pepper, to taste
1 tablespoon sugar
1 glass red wine
Broth, as needed
Instructions
Finely chop the onion and the garlic. Separately, finely chop the carrot, celery, parsley, and sage.
Place the lamb pieces into a large bowl and cover them with the chopped vegetable and herb mixture. Add the vinegar and oil, season with salt and pepper to taste, and let marinate for 2 hours.
After 2 hours, transfer the lamb along with the vegetables and the marinade liquid into a baking dish. Sprinkle with the tablespoon of sugar, pour in a scant ladle of broth, and bake in the oven at medium heat for about 1 hour.
Baste occasionally with additional broth to ensure the cooking juices remain fairly liquid.
After the hour has passed, drizzle the lamb with the red wine and continue roasting in the oven for about 10 minutes.
