800 g (approx. 1.75 lbs) beef chuck or shoulder cut, cubed
400 g (approx. 14 oz) yellow onions
80 ml (approx. 1/3 cup) extra virgin olive oil
1 glass (approx. 3/4 cup) red wine
1 tablespoon sweet paprika
1 tablespoon hot paprika
2 glasses (approx. 1 1/2 cups) water
1 teaspoon caraway seeds (or cumin)
1/2 teaspoon dried marjoram
1 sprig fresh rosemary
1 sprig fresh thyme
1 bay leaf
Salt, to taste
Instructions
Thinly slice the onions and gently sweat them over low heat with the olive oil in a heavy-bottomed pot.
Once the onions turn golden, add the beef cubes and brown evenly.
Continue cooking to let the meat develop flavor until a golden crust begins to form at the bottom of the pot. Pour in the red wine, allow the alcohol to evaporate slightly, and season with salt.
Dust the meat with both the sweet and hot paprika, add a splash of water, and simmer covered over low heat for about 1.5 hours, adding more water only if necessary.
Finely chop the herbs (rosemary, thyme, bay leaf, marjoram, and caraway), mix them with a small drizzle of olive oil, and stir the mixture into the goulash.
Continue simmering over low heat for a few more minutes to blend the flavors. Serve hot, ideally paired with classic or grilled polenta.
