Pork Loin Scaloppine with Cherry Tomatoes
Ingredients (Serves 4)
- 600 g pork loin cutlets (thinly sliced)
- 300 g cherry tomatoes
- 1 clove of garlic
- 1/2 glass dry white wine
- 80 g all-purpose flour
- Extra virgin olive oil
- Fresh parsley
- Salt and black pepper, to taste
Instructions
- First, rub the pork slices with salt to season them, then dredge them in the flour.
- Thoroughly wash the cherry tomatoes and cut them into quarters.
- Crush the garlic clove with the flat side of a knife blade without peeling it (garlic in camicia).
- In a skillet, gently brown the garlic in a drizzle of extra virgin olive oil.
- Add the pork slices and brown over brisk heat on both sides.
- Add the cherry tomatoes and the white wine, lower the heat, cover, and let simmer for about 10 minutes, flipping the meat halfway through.
- Remove the lid, allow the liquid from the tomatoes to reduce into a rich, creamy sauce, and turn off the heat.
- Adjust salt and pepper to taste, finish with finely chopped fresh parsley, and serve.
