Braised Beef (Brasato di Manzo)

  1. Place the beef roast into a large container.
  2. Roughly chop the onion, carrots, and celery.
  3. Add the chopped vegetables to the container with the beef, followed by the garlic, rosemary, bay leaves, and peppercorns.
  4. Pour over the entire bottle of red wine. Allow the beef to marinate for a full 24 hours, making sure to turn the meat at least a couple of times.
  5. Once the marination time is complete, remove the beef, transfer it to a clean surface, and pat it dry with paper towels.
  6. Tie the beef with kitchen twine to give it an even shape that will hold throughout cooking.
  7. Heat the oil in a heavy-bottomed pot or Dutch oven. Dust the beef evenly with flour, then brown it in the pot along with the butter.
  8. Strain the marinade through a sieve to separate the aromatics, keeping only the infused red wine.
  9. Once the beef is thoroughly browned on all sides, reduce the heat to low. Gradually add the reserved wine in several additions over the course of the cooking time, which will range from 2 to 3 hours.
  10. Keep the pot covered with a lid and maintain a very low simmer throughout the entire cooking process.
  11. When the meat is fully cooked and tender, remove it from the pot and transfer it to a cutting board. Carefully remove the kitchen twine, then slice with a sharp, straight-edge knife to prevent the meat fibers from tearing.
