Pot-Roasted Pork Shank
Ingredients
- Pork shanks
- 2 tablespoons oil
- 1 large white onion
- A few juniper berries
- 4 whole cloves
- 2 bay leaves
- 1 sprig fresh rosemary
- ½ glass brandy
- 1 glass red wine
- Salt
- Black pepper
Instructions
- Rub the pork shanks generously with salt and pepper.
- Peel and roughly slice the onion.
- Rinse the herbs and set them aside.
- Heat the oil in a wide, deep pot (preferably cast iron or earthenware).
- Place the shanks in the pot and brown them on all sides over medium-high heat.
- Once the shanks are well browned, remove the pot from the heat, pour in the brandy, and flambé.
- Once the alcohol has burned off, return the pot to the heat. As soon as it comes back to a simmer, add the sliced onion, herbs, and spices.
- Turn the shanks, pour in the red wine, bring back to a simmer, and add a generous glass of water.
- Cover with a lid and cook over moderate heat for two hours, turning the shanks occasionally.
