Julienne the zucchini, finely chop the onion, and dice the pancetta.
In a large skillet, sauté the onion, then add the pancetta.
Once the pancetta is well browned, add the zucchini, season with salt and pepper, pour in a glass of water, lower the heat, and cover.
Cook for about 30 minutes, stirring occasionally.
Meanwhile, dredge the pork cutlets in the flour.
In a separate skillet, heat a little olive oil and brown the meat for 1–2 minutes per side.
Add the browned meat to the zucchini and pancetta mixture, pour in the white wine to deglaze, cover with a lid, and simmer over low heat for another 20 minutes, turning the meat occasionally.
Remove the lid and cook for 2 minutes over higher heat to let the sauce thicken, then remove from the heat and serve.
