Pan-Braised Duck Legs

  1. In a suitably sized pan or casserole, brown the duck pieces in olive oil, turning them for about 10–15 minutes.
  2. Add the white wine and let it evaporate over high heat.
  3. Meanwhile, clean and wash the vegetables and herbs.
  4. Coarsely chop them using a food processor.
  5. Add the chopped aromatics to the meat along with the salt.
  6. Cook for approximately 3–4 hours, or until the duck is tender. Turn the duck pieces occasionally during cooking and add warm water as needed to keep moist.
  7. Serve the duck legs hot, accompanied by vegetables and/or polenta.
