To prepare the cider chicken, heat olive oil in a casserole pan or Dutch oven. Add the diced pancetta and chicken pieces, then brown over medium heat for 7–8 minutes, turning to brown on all sides.
Season with salt, add the garlic cloves (crushed but left unpeeled), and pour in the cider. Let it evaporate slightly, then continue cooking for about 30 minutes with the lid partially covering the pan.
After this time, squeeze and strain the juice of the lemon. Pour the lemon juice over the chicken, raise the heat, and allow the cooking juices to reduce while turning the pieces to coat them in the sauce.
Remove and discard the garlic cloves, garnish the dish with finely chopped chives, and serve the cider chicken hot.
