Roast Lamb Shoulder with Potatoes
Ingredients
- 1 lamb shoulder
- 800 g red potatoes
- 2 cloves garlic
- 2 sprigs fresh thyme
- 1 glass dry white wine
- Salt, to taste
- Black peppercorns, to taste
Instructions
- In an oven-safe roasting pan, sauté one clove of garlic. Add the lamb shoulder, thyme leaves, and peppercorns, and brown thoroughly on all sides.
- Season with salt.
- Deglaze with the white wine, then transfer to an oven preheated to 160°C (320°F) for about 1 hour.
- Baste with the cooking juices and turn the lamb shoulder after 30 minutes.
- Meanwhile, peel and slice the potatoes, rinse them under running water, and let them drain thoroughly in a colander.
- Add the potatoes to the pan around the lamb and bake for about 40 minutes.
- Increase the oven temperature to 180°C (350°F) and bake for another 20 minutes.
- Serve hot and enjoy!
