All-purpose flour (for dredging, plus 1 tablespoon for the sauce)
1/2 glass (approx. 1/2 cup) dry white wine
4 tablespoons olive oil
Salt and black pepper, to taste
Instructions
Zest and juice the oranges, setting the zest and juice aside separately.
Place the chicken pieces into a bowl with flour and coat them thoroughly on all sides, shaking off any excess.
Heat 4 tablespoons of olive oil in a skillet over medium-high heat. Add the chicken and brown on all sides until golden. Deglaze the pan with the white wine.
Once the alcohol has evaporated, pour in half of the orange juice. Lower the heat to medium and cook for approximately 30 minutes, turning the chicken occasionally. Season with salt and pepper to taste.
Once the chicken is fully cooked, remove it from the skillet and set aside. Add the remaining orange juice and 1 tablespoon of flour to the cooking juices left in the pan.
Whisk briskly and let simmer until the sauce thickens.
Return the chicken to the skillet, turn off the heat, and toss gently to coat in the sauce and let the flavors meld.
Garnish the chicken with the reserved orange zest and serve hot.
