Italian Stewed Chicken (Pollo in Umido)
Ingredients
- 600 g (approx. 1.3 lbs) chicken pieces
- 300 g (approx. 1 1/4 cups) tomato purée (passata)
- 100 g finely chopped celery, carrots, onions, and leeks
- 500 g (approx. 1.1 lbs) potatoes, peeled and cut into chunks
- 50 ml dry white wine
- 15–20 pitted black olives
- Warm chicken broth, as needed
- Extra virgin olive oil, as needed
- Salt, to taste
- Fresh parsley, finely chopped, to taste
Instructions
- Pour a drizzle of olive oil into a wide, shallow casserole dish and add the chopped vegetable mixture.
- Sweat the vegetables gently over low heat, stirring occasionally.
- Add the chicken pieces and potatoes to the pan.
- Brown them evenly over medium heat, turning to sear well on all sides.
- Remove the potatoes from the pan and set them aside.
- Deglaze the pan with the white wine.
- Once the wine has evaporated, add the tomato purée.
- Add the black olives and season with salt.
- Pour in approximately one glass (about 1 cup) of warm chicken broth.
- Cover with a lid and simmer over low heat for about 30 minutes.
- Return the reserved potatoes to the pan, cover, and continue simmering over low heat for another 30 minutes.
- After this time, check that the chicken is fully cooked through; remove the lid and let the sauce reduce slightly.
- Transfer the stewed chicken to serving plates, garnish with freshly chopped parsley, and serve immediately.
