Pan-Fried Broccoli

  1. Start by prepping the broccoli. Cut the florets away from the stalk and set them aside. Peel the tough outer layer off the stalk and cut it into thin rounds.
  2. Drop the broccoli into boiling water and cook for 3 minutes. Once the time is up, transfer them immediately into a bowl of ice water to preserve their bright green color. In the meantime, thinly slice the fresh chili pepper, discarding the seeds if you prefer a milder heat.
  3. Heat a non-stick skillet and pour in the extra virgin olive oil. Add the two garlic cloves, anchovies, and sliced chili pepper to create a flavor base.
  4. Sauté for about 3 minutes until the anchovies melt into the oil. Add the blanched broccoli and season with fine salt.
  5. Cover with a lid and cook over medium heat for approximately 7 minutes. Remove the lid and let the broccoli cook for another 8 minutes to brown nicely.
  6. Once they have developed a beautiful golden color, your pan-fried broccoli is ready to be served.
