Thoroughly wash the sage leaves under plenty of cold running water, then place them to dry on a tray lined with paper towels.
Pour the flour into a mixing bowl and gradually add the cold beer, whisking continuously.
Continue whisking until you obtain a smooth, lump-free batter, then season with salt to taste.
Dip the sage leaves one by one into the prepared batter, turning them to coat both sides completely. Heat the frying oil in a pan until it reaches 170°C (340°F), checking the temperature with a kitchen thermometer.
Fry the sage leaves in small batches. Once they are golden brown, remove them from the oil using a slotted spoon and drain on paper towels. Season with a pinch of salt and serve immediately.
