Wash the parsley, pick the leaves, and pat them dry with paper towels.
Peel the garlic clove.
Place the parsley and garlic on a cutting board and finely chop together using a mezzaluna or chef's knife.
Transfer the chopped mixture to a plate, add the breadcrumbs, and mix well to combine.
Wash the tomatoes, cut them in half lengthwise, coat the cut sides with the seasoned breadcrumbs, and arrange them in a baking dish greased with olive oil.
Drizzle the tomatoes with a thin stream of olive oil, season with a pinch of salt and a grind of pepper, and bake in a preheated oven at 200°C (400°F) for 15 minutes. Continue cooking for a few additional minutes if needed until golden brown on top.
