Pan-Stewed Onions
Ingredients
- 3 white onions
- 4 tablespoons olive oil
- 1 glass white wine
- 2 bay leaves
- Salt, to taste
- Black pepper, to taste
Instructions
- Peel the onions, trim the ends, and thinly slice them using a sharp knife or a mandoline.
- Pour the olive oil into a non-stick skillet, add the sliced onions, and sauté for a few minutes until softened.
- Season with salt.
- Add freshly ground black pepper to taste.
- Add the bay leaves, previously washed and patted dry.
- Cook over moderate heat for 30 minutes, stirring occasionally.
- Pour in the white wine and allow the alcohol to evaporate.
- Cover the skillet with a lid and continue cooking for another 20 minutes, stirring frequently.
- If the onions become too dry, add a splash of water as needed.
- Finish cooking, stirring often, until the liquid has completely reduced.
