Sautéed Pumpkin with Rosemary and White Wine
Ingredients
800 g pumpkin or squash flesh
2 sprigs fresh rosemary
100 ml white wine
2 garlic cloves
4 tablespoons extra virgin olive oil
Fine salt, to taste
Black pepper, to taste
Instructions
To prepare the sautéed pumpkin with rosemary and white wine, begin by cutting the pumpkin into pieces and removing the skin.
Cut the prepared pumpkin flesh into walnut-sized chunks.
Heat the extra virgin olive oil in a skillet and brown the garlic cloves (1–2, depending on preference). Once golden, you can choose to remove them or leave them in the pan.
Add the pumpkin chunks and roughly chopped rosemary, then sauté until the pumpkin is nicely browned.
Pour the white wine over the pumpkin, allow it to evaporate, and season with salt.
Continue cooking the pumpkin for about 10 minutes.
Season with black pepper to taste and serve immediately!
