To prepare the pan-fried potatoes, start by peeling the potatoes and cutting them in half, then cut them lengthwise once more to create wedges.
In a non-stick skillet, heat a drizzle of olive oil with the unpeeled garlic cloves and the rosemary sprigs to infuse the oil. After a couple of minutes, add the potatoes.
Season with salt and pepper, then pour in the water. Cover with a lid and cook over low heat for 20 minutes, turning them gently from time to time.
Remove the lid, raise the heat, and cook for about another 10 minutes to allow them to brown, shaking or tossing the pan frequently. Once the potatoes are nicely golden and crisp, remove the garlic and rosemary sprigs. Serve your pan-fried potatoes piping hot!
