Patate Vastase (Trapani-Style Baked Potatoes)

Patate vastase is a savory specialty typical of Trapani cuisine in western Sicily. A flavorful classic found throughout the city's rotisseries and pizzerias, this dish is wonderfully simple to recreate at home.

  1. Preheat the oven to 200°C (400°F). Peel the potatoes and cut them into rounds.
  2. Thinly slice the onion and halve the cherry tomatoes.
  3. Arrange the sliced potatoes, onion, and cherry tomatoes in a baking dish. Season with oregano, salt, and black pepper, then drizzle generously with extra virgin olive oil. Toss gently to combine.
  4. Bake in the preheated oven for about 30 to 35 minutes, or until the potatoes are tender and golden.
  5. Towards the end of the cooking time, cut or tear the fiordilatte mozzarella into pieces and scatter it evenly over the top.
  6. Return to the oven for a few minutes until the mozzarella has melted and turned bubbly. Serve hot as a hearty side dish or as a quick, satisfying main course.
