Thoroughly clean the fennel bulbs, rinse them, and slice them into evenly thick pieces, taking care not to cut them too thick.
Arrange the slices in a radial pattern in a baking dish lightly greased with olive oil. Drizzle with a little more olive oil and add a pinch of salt.
Bake in a preheated oven at 180°C (350°F) on the middle rack for about 20 minutes.
Remove from the oven and top with the breadcrumbs (previously mixed with the finely chopped herbs), another pinch of salt, and a generous drizzle of olive oil.
Return to the oven for about 15 minutes. For the final 5 minutes, switch to the broiler/grill, increase the temperature to 200°C (400°F), and move the dish to the upper rack to brown nicely. Serve hot and enjoy!
