Salento-Style Savoy Cabbage
Ingredients
- 1 head Savoy cabbage (about 500g / 1.1 lbs)
- 8 cherry tomatoes
- 1 fresh chili pepper
- 1 red onion
- Extra virgin olive oil, as needed
- Salt, to taste
Instructions
- Remove and discard the damaged outer leaves of the Savoy cabbage.
- Cut the cabbage in half.
- Slice it into strips approximately 1 cm (about ½ inch) thick.
- Rinse thoroughly under cold running water.
- Peel the red onion and chop it finely.
- Heat a drizzle of extra virgin olive oil in a large saucepan or Dutch oven.
- Add the chopped onion.
- Finely chop the fresh chili pepper.
- Add the chili pepper to the onion and sauté for a few moments.
- Wash the cherry tomatoes and cut them into wedges.
- Add the tomatoes to the sauté base.
- Add the cabbage.
- Season with a pinch of salt.
- Pour in 300 ml of water.
- Cover with a lid and let cook for about 20 minutes, or until the cabbage is very tender.
- Plate, finish with a grinding of black pepper, and serve.
