Boil the pearled farro for about 20 minutes (no soaking required).
Meanwhile, cut all the vegetables into bite-sized pieces and boil them in salted water. Once cooked, drain and combine them with the boiled and drained farro.
In a separate small pan, gently sauté 4 tablespoons of extra virgin olive oil, the crushed garlic cloves, and the chili pepper over low heat.
Once the oil is fragrant, pour it over the warm farro and vegetables to dress them.
Mix well and serve either as a first course or as a side dish.
