Fried Zucchini
Ingredients
- 570 g zucchini
- 30 g coarse salt
- 100 g all-purpose flour (type 00)
- 600 g vegetable oil (for frying)
Instructions
- To prepare the fried zucchini, first wash and trim the ends, then slice them lengthwise into strips about 1 cm (1/2 inch) thick.
- Cut the slices in half crosswise and slice them into fairly thin sticks.
- Transfer the zucchini sticks to a colander, add the coarse salt, and cover with a plate, making sure it rests directly on top of the zucchini.
- Place a weight on top of the plate and let the zucchini rest for 2 hours so they release their excess liquid.
- After 2 hours, you will see that the extracted liquid has drained into the bowl underneath.
- Rinse the zucchini under running water to remove the salt, then thoroughly pat them dry with a clean kitchen towel.
- Pour the vegetable oil into a pot or deep pan and heat it to 170°C (340°F).
- Meanwhile, toss the zucchini evenly in the flour, then tap off any excess flour using a strainer and add them directly into the hot oil.
- Fry the zucchini for 4 to 5 minutes until golden brown. Fry in small batches to keep the oil temperature from dropping.
- Once nicely golden, remove the zucchini with a slotted spoon and transfer them to a plate lined with paper towels to drain the excess oil.
- Your fried zucchini are ready to serve, hot and crispy!
