First, wash the zucchini, trim off the ends, and slice them using a mandoline to a thickness of about 1/2 cm (1/4 inch).
Cut each slice horizontally into 3 strips, cut them in half, and split each matchstick lengthwise once more to achieve thin julienne strips.
While the zucchini strips are still damp, transfer them to a bowl with the flour. Toss with your hands until every piece is evenly coated.
Heat plenty of oil in a large skillet until hot. Add a handful of zucchini at a time so the pan is not overcrowded. Fry for about 1 minute, until golden brown. Drain on paper towels.
Repeat the process until all the zucchini are fried. Finish with a sprinkle of salt and serve hot!
