Trim and wash the wild fennel, cut into pieces approximately 5 cm (2 inches) long, and blanch in salted boiling water. Drain thoroughly and set aside to cool.
Meanwhile, whisk together the eggs, flour, water, milk, and a pinch of salt to form a smooth, fluid batter.
Dip the wild fennel pieces into the batter to coat evenly, then fry in hot oil, lifting them out once they turn golden brown.
Transfer to a serving platter, season with additional salt if needed, and serve piping hot.
